Fresh Spring rolls w/ Peanut Dipping sauce

Veg and Shrimp fresh Spring rolls with Peanut Dipping sauce 

Yield - Serves 7-8

Ingredients

Rice pepper wraps 8 ea.

Steamed shrimp 8 large, sliced in half

Thai basil, chopped 1 1/3 T 

Mint 3T

Cilantro 3T

Romaine lettuce 2 leaves

Water 1/4 C

Lime juice 2 T

Garlic, minced 1 clove

Garlic chili sauce 1/2 tsp

Chunky peanut butter 1/4C

Hoisin sauce 1T

Soy Sauce 2tsp

Method of Prep

1.Fill a large bowl with warm water. Dip one wrapper into the hot water for 1 second to soften. Lay wrapper flat. In a row across the center, place 2 shrimp halves, a handful of vermicelli, basil, mint, cilantro and lettuce, leaving about 2 inches uncovered on each side. Fold uncovered sides inward, then tightly roll the wrapper, beginning at the end with the lettuce. Repeat with remaining ingredients.

2.In a small bowl, mix the hoisin sauce, chunky peanut butter, lime juice, garlic, garlic chili sauce, and soy sauce. Combine until evenly mixed.

3.Serve rolled spring rolls with the peanut sauce and enjoy!
