Lemon & Herb Marinated whole Grilled Chicken

Yield - Serves 3/4 people

Ingredients 

Whole Chicken 1ea.

Lemon, sliced 2ea.

Rosemary 1 bunch

Olive oil 1/2 C

Thyme 1/2 bunch

Bay leaf 1ea.

Method of Prep

  1. With a sharp chefs knife using a great amount of strength cut down the spinal cord of the chicken and separate one side of the chicken from another while still keeping the frontal side of the chicken connected. 

  2. Place the chicken in a ziplock bag with the rest of the ingredients and let marinate for at least 1 hour. 

  3. Bring your grill to medium/high heat. Transfer the marinated chicken out of the marinade and pat dry with paper towels. 

  4. Place the chicken onto the grill skin side down and wait about 3-5 minutes before flipping. 

  5. Once the chicken is browned on the outside transfer to a sheet pan and turn the grill down to low heat. Place the sheet pan with the chicken into the low heat grill to continue the cooking process. 

  6. Use a thermometer to make sure the chicken is cooked to 165 degrees F. Enjoy!
