Baked Summer Squash with bread crumbs and Parm

Yield- Serves 3-4

Ingredients

Summer squash 1 large or 4 small

Thyme 4 sprigs, picked

Olive Oil 1 1/2 C

Salt 2T

Pepper 1T

Bread crumbs 1/4 C

Parmesan cheese 1/4 C

Method of Prep

  1. Preheat your oven to 375 degrees F.

  2. Slice the summer squash into 1/2 in slices. If using a large summer squash make sure to remove all seeds from the inside using a spoon.

  3. Toss the sliced summer squash in a medium sized mixing bowl with the olive oil, thyme, salt, and pepper.

  4. In a baking dish shingle the coated summer squash evenly and in a even layer. 

  5. Top the squash with the bread crumbs and parmesan and baked in the oven for around 20-30 mixtures or until tender. 

  6. Serve warm as a side dish and enjoy!
