Beer Battered Zucchini Sticks
Yield- Serves 8
Ingredients:
Beer of your choice (I used a lager) 1 ea./ 4C
All purpose flour 3 C
Paprika 2 T
Garlic powder 5 T
Onion powder 4 T
Salt 6T
Pepper 2T
Whatever you want to add... get crazy!
Zucchini, medium sized cut into rods 10 ea.
Method of prep:
1.Cut your zucchini into 2in rods, set aside.
2.Heat canola or vegetable oil (your preference) in a sauce pot to 375 degrees about 3 inches deep.
3.Whisk all dry ingredients together with the beer, don’t leave any clumps! (quantities may vary but you’re looking for a thick cake batter consistency, you want your batter to coat the back of a spoon completely.)
4. Dunk those zucchini babies in the batter and make sure they are evenly coated.
5. Slowly place the battered sticks in the hot oil and keep them frying until you achieve a golden brown colored crust!
6.Immediately season with salt as soon as they come out of the oil! Allow the fried zucchini sticks to rest on a paper towel/ cooling rack to absorb the excess oil.
7. Enjoy!
